Default Canned Venison

Theres nothing queer about this manly recipe!




Git your pressure cooker out(potential bomb)....... you do have one don't you

Keep it small to start.

6 or 7 pint jars.

Cubed, strips, or of chunks venison to fill jars but leave one inch head space.

Brown venison in frying pan. Use a little fat to fry as venison is very lean. Keep venison rare in the middle.

Take venison out of frying pan and now make a broth by adding water to drippings boil a couple minutes. Skim off fat.

Add 1/2 teaspoon of pickling salt( no do not use table salt) to each jar
Add a clove of garlic if you want to.

Now pour hot broth over venison in jars fill to one inch head space just covering venison.

Wipe Jar rims put your hot lids on jars adjust rings.

Put in the pressure cooker for 75 minutes at 10 lbs pressure.

If you do quart size jars cook for 90 minutes at 10 lbs pressure

I don't eat my venison out of a jar. I grab a couple of steaks out of the freezer and throw them on the grill, or grab a roast and add some carrots and potatoes and let it slow cook all day, or brown some burger and make chili out of it.

Canned venison? There's something about that sounds un-natural

Dont knock it till ya try it. Most tender venison you'll ever eat!
I am shocked that Mr Arrow has not practiced this method of preserving.

I agree with Spidey
Easy to store(no electric/refrigeration needed)
Great for long term storage
Great for taking on camping,hunting,fishing trips
Easy to cook/prepare/eat

I like it heated and put over noodles and mashed taters

Really Ferret think out of the box and give it a try. Its fun to can it yourself. And even better to reap the rewards of your effort. Have I ever steered ya wrong ?
